Onion Pakora
Crisp Onion pakoras for a rainy evening, fried in small batches.
Ingredients
- Onion1 medium, sliced
- Green chilli2, slit
- Dhania (Coriander)a small handful, chopped
- 1 cup besan
- 1/2 tsp ajwain
- 1/2 tsp red chilli powder
- a pinch of baking soda
- oil for deep frying
- salt to taste

Method
- 1Prepare the Onion, Green chilli, Dhania: slice or chop them fine.
- 2Mix with 1 cup besan, salt, 1/2 tsp ajwain, 1/2 tsp red chilli powder and a pinch of baking soda.
- 3Add water a spoon at a time to make a thick batter that just coats the vegetables.
- 4Heat oil for deep frying to medium hot and drop in small spoonfuls.
- 5Fry until deep golden and crisp, drain on paper and serve hot with chutney.
Storage: Best eaten immediately.
Leftovers: Crisp up leftovers in a hot pan or air fryer, not the microwave.
